Roadtrip

Well, tomorrow is the big day! I'll be heading south for 800 miles. It will be worth it, though. I get to see my Daddy :) And this trip will mainly entail apartment hunting. I'm excited to find a place. I just hope I get the right apartment and it all works out for me. I'll be taking pictures and updating while I'm down there, so stay tuned!

Busybee

So this is somewhat a to do list for myself, while talking about my little adventure I'm about to make. Unfortunately, New York is just not for me and its time to pack my life up and move again. This time I'll be back down south of the Mason-Dixon Line. I'll be living in the bible belt, Tennessee. I'm actually looking forward to moving and it has a lot of perks. My father will be about 45 minutes from me and I will be 12 hours from my grandmother and 12 hours from my brother. I am still going to finish up my licensing procedures for New York State so that I can switch my cosmetology license over to Tennessee. So I'll come back to New York for that and to visit my friends I made here.

So today is Monday, and I have a ton to do before Thursday. I am going to sleep all day Thursday and then head down to Tennessee around 8 or 9 pm Thursday night. I will arrive mid-day Friday. Then I will meet up with my awesome Dad, and go apartment hunting.  I have a pretty good feeling about where I will end up, and I'm excited. There's just something about moving into a brand new apartment. I love to decorate and be a home maker.

So in between now and tomorrow, I have to clean my car, finish packing, clean my dog's carrier crate, and load up my car with stuff I don't really need right now, just so I have less to load up when I make the official move. My Dad is going to hang on to the stuff in between now and making the official move. Side note, I need to pack up my tiny Christmas tree. I also need to get stuff to patch holes, and I have to find shipping tape. Oh, I also need an EZ-Pass.

I'm also going to treat myself to new bedding for when I get there. I may redo the bathroom, as well. But I also have to get a small apartment sized washer and dryer. What I love about down south is that almost every complex has washer and dryer hookups in their units. Anyway, I will post this now but most likely will be adding to it later this evening.

Can I just tell you how much I love this song? Because I lovelovelove it! I always play it when I'm driving and I love to sing along with it. The bridge of the song is absolutely amazing! First of all, I can definitely relate to it. And of course they sound amazing together! Give it a listen.

Review: Velveeta Cheesey Skillets (Chicken Alfredo)

So tonight I didn't feel like putting anything fancy together and I decided this would be perfect for a review. I was at Walmart a few weeks ago and bought this Velveeta Cheesey Skillet to try because it was literally under $2 for the box. Total cooking time, including prep time was about 30 minutes. The directions are step by step on the back of the box. This is perfect if you're running low on time and it is very budget friendly. The only thing you have to buy separate is the chicken. I used two large boneless skinless chicken breasts and its just the right amount.

However, I am the type of cook where I will put my own twist on things and add things where I see fit. So I finely chopped a small onion, used a tablespoon of chopped fresh garlic, and I seasoned the chicken with salt and pepper. Brown the chicken up until its about 3/4 of the way done before you add the onions and garlic, if you choose to do so. For presentation purposes, I also took the liberty to add dried parsley flakes over the dish.

Water For Elephants

So I really used to love reading. I'm getting back into it, slowly but surely. Right now I'm reading 'Water For Elephants'. I picked it up the other day at Target. The fact that it was 20% off just gave me even more of a reason to buy it. I really wanted to see the movie but never got around to it, so I'm going to read the book instead. I might see the movie later but I just feel like there is so much more detail in the book.

Crossroads...

Let me just explain a little bit about my life here....

So tonight I went out to celebrate a friend's 21st birthday. It was fun and I met some nice people. I also met her friend who happens to be a manager for Supercuts in one of the suburbs around here...

Mind you, I have been looking for work for two months now and every time I would get closer, I just got let down. This last place hit me pretty hard, actually, and that's when I decided it would be best for me to move closer to my father. I have finally come to peace with moving and am actually looking forward to it.

But on the other hand, should I stay and put a year behind the chair and finish getting my license? I just don't know. My heart is so set on moving now. I don't know what to do. On the other hand, I wanted to be able to get myself a job without any help because I have too much pride.

I just thought for sure I'd be able to get a job all on my own and I tried so hard. I'm miserable sitting in my apartment every day with nothing to do. I'm going to Tennessee next weekend to find a place to live. My heart is just so set on moving...

But again, should I stay here and work and get experience? I just don't know what to do. My father has been my rock and my safe place... He has his heart set on me moving close to him, too. I don't want to let him down even though this is MY life.

I applied to TEN salons and nobody wanted me... I just feel deep down in my heart I should move closer to him. I guess I just had to get this out in black and white because the subject came up again tonight. It kind of ruined my night, to be honest. I'm glad I have finally, MAYBE, found a place that wants me but... I just don't think I can do it here anymore.

Creamy Chicken N' Biscuits

Being from the south, I love comfort food. It soothes the soul and warms the heart. One of my favorite meats is chicken because its so versatile and the possibilities are endless! This recipe is not fat free or diet friendly, so I wouldn't cook this very often but since I've been sick and haven't cooked a good meal in a while, I'm making this tonight.

Ingredients:
2 cups of chicken, cut into one inch pieces
1 medium chopped onion
3 cups of mixed vegetables (you can find these canned or frozen, and you may or may not need all 3 cups)
2 tablespoons olive oil
1 can cream of mushroom soup (you can use any, i.e. chicken, cheese, celery)
1 cup sour cream
1 cup cheddar cheese
1 package of Bisquick Complete Cheese Garlic Biscuits (you can find this in the baking isle of your grocery store, and it costs about $2)

Directions: Preheat Oven to 400 degrees. Sautee chicken and add the onion when the chicken is about half way cooked. Cook until chicken is done. Add vegetables, cream of mushroom soup, sour cream, and cheese. Heat through. Place in baking dish and spread evenly. Bake in the oven for about 20 minutes. After 20 minutes, remove dish and heat oven to 450 degrees. Mix together the biscuit mixture and put spoonfuls of biscuit mixture over the chicken dish. Bake at 450 for another 8 to 11 minutes, until biscuits are done. Enjoy!



Some side notes: You can use fresh vegetables, I just used what I had on hand. You can also make the biscuits from scratch. Again, this was easier for me and its what I had. If you make your own, make enough for 6 biscuits. You also need to season the meat to your liking. I used salt, pepper, fresh garlic, and one medium onion. The amount of vegetables I used was just under three cups, so that's fine also. Again, you may or may not need all three cups.
