That September Day...

I was 11. I was in math class that morning. The phones were ringing off the hook and we began watching the news. It was utter and total chaos. I remember not fully understanding everything at such a young age, but I felt sad for our country.

Its still hard to believe. I remember the footage of the victims jumping out of the buildings. The looks of horror and despair on people's faces, running all over Manhattan, trying to get out before the buildings collapsed. Such heartbreak for this country. Its terrible a thing like this would happen on US soil. Such loss right here on our own land. So many parents, daughters, sons, aunts, uncles, cousins, in-laws, husbands, wives, etc., that didn't get to come home that day. So many people.

I was blessed enough to be able to go to NYC in the Spring of 2006. We went to Ground Zero. It was a very humbling and heartbreaking experience. I'm tearing up thinking about it now. They were still cleaning up so much debris from that day. Almost five years later. I also was able to go into the chapel across the street where emergency responders took shifts sleeping in between searching for survivors. I cried. I cried for our country. For all the victims and their families. There was a whole wall of "Missing" posters put up for victims that haven't been recovered, and probably never will be recovered. There were signs hung up all over the chapel of support from countries all over the world. They cried with us that day. They remembered. So should we.

If you ever get to experience this, I urge you to partake in it. This experience will change and move you for the better. Please don't forget what happened on this day 11 years ago.

Sometimes Its The Little Things

So I'm just sitting here alone at home tonight. Like always. Its a little depressing because its my norm, but I decided to try and focus on the good things.

I have a job. It is very hard work, but I have a job.

I have a sweet dog to keep my lonesome self company. She is no Itzy Bitzy (my old dog, whom I miss so much and still cry about), but she is a good dog. With some training she will be a great one.

I have my Father, that I can call anytime during the night or day. He is always there for me. He annoys me sometimes, but I am thankful to have him in my life. He is very supportive and without him I my life would have turned out a lot differently.

I have a single brew cup Keurig that my dad leaves here. I have some yummy coffee flavors that help wake me up in the morning. I really like having my peace and quiet with my coffee and cigarette in the morning.

While I don't have a boyfriend, friends to hang out with, a lot of money, or anything to do besides work, I do have these things I have listed above. And if that's all my life ever turns out to be, I will be okay with it.

Wel...

So I've been working. A lot. Like, 12 hour days. But that's the norm for this career. I'm okay with it, I just need to adjust. The money is going to be amazing and I can't wait. I really enjoy the people I work with. My dog doesn't appreciate me being so busy, but she will be okay. Its an adjustment for us both.

I'm annoyed with one of my friends in New York. She's so caught up in this new boyfriend of hers, I rarely hear from her. When I do hear from her, its on her terms and since I'm busy now, it just can't be like that. But I hate when a friend gets involved with a guy and she's basically up his ass. Pardon my French, but you know what I'm talking about. Its just wrong to act like this one person is more important at all times. I feel like with any situation in life, a good balance is much needed.

Anyway, I've got to make some dinner at almost 11 p.m., hahaha! I'll wrong more tomorrow night since I'll be out working around 9 hours instead of 12 or longer. I think I'm going to make some yummy beef stew on Sunday. If I do, I'll post the recipe that evening.

Random

Isn't it funny how one day someone can be such an important part of your life and then they have nothing to do with you at all? Just so strange to think about.

Shit Happens

So, I failed my Health Insurance exam for the state today. I don't know what happened. I studied hard for it and I even took the practice exam twice yesterday and once this morning before I took the real deal exam. Oh, and now I'm eating mini Twix and drinking a Coke, which I NEVER do. Yay for emotional indulgence. I'd rather have a Pumpkin Spice Latte, but the Starbucks near me won't have them for a couple more days. Sigh. I called my boss to tell him what happened, how I failed my exam by three little points, but wasn't able to reach him so I'm awaiting his return phone call. I guess I'll just study even harder this time around and take it again. Maybe I shouldn't have taken the practice one this morning before I went to take the real test. Probably over clouded my brain. Then of course, I didn't have coffee or eat anything before the test. I'm not trying to make excuses, I'm just experiencing hindsight right now. What I did, versus what I should've done. Sigh. Til next time...

Home Made Tortilla Chips

So I decided to make home made tortilla chips with left over tortillas! They are super yummy and way cheaper than buying a bag of tortilla chips because chances are you have everything on hand except the tortillas. I got the tortillas at Aldi, but they weren't over $2.

What you will need:
Tortillas
Kitchen shears
Kosher salt
Pam spray
Baking sheet

Pre-heat the oven to 350 degrees. Lightly grease the baking sheet with Pam. Cut up the tortillas to make them like chips (this is easy to do, but I can't figure out how to explain it on here, haha). You'll see what I mean in the pictures. Arrange the cut up tortillas on the baking sheet and lightly grease them. Sprinke salt and bake at 350 for 10 minutes, or until golden brown. They are delicious!

Quesadillas

So I love me some Mexican food. Quesadillas, in particular with some yellow rice. I'm not making yellow rice tonight because I'm not that hungry but I did want quesadillas. I bought everything but the meat from Aldi. I love shopping there and saving money. The same people that own Aldi also own Trader Joe's, which is based out of the West coast. None of the ingredients were over $2, except for the cheese. However, they give you FOUR cups of cheese in a bag, as opposed to the traditional two cups you'd get in a Sargento or other brand name.

What you need (basics):
Flour tortillas
Cheese
Refried beans
Ground beef
Taco Seasoning
Sour cream for dipping
(You can put ANYTHING on your quesadilla, this is just the basic list that I like on mine. If you have fresh cilantro, I recommend adding a little sprinkle to it.)

Saute the meat until brown (with the taco seasoning). Set aside. Turn burner to low and spray with cooking oil (Pam).

Put first tortilla down, then assemble as so: refried beans, meat, cheese. Then put the other tortilla on top. Grill til the first side is slightly golden brown, then flip it until the other side is done. Cut into slices and enjoy!

PS: Got leftovers? Scramble some eggs in the morning and make egg quesadilla borritos!!! They're really good. :)

Out Of Sorts

So this post is going to be really unorganized, but I don't care.

I passed my Life Insurance exam this week and I'm taking my health exam Saturday, so hopefully I'll pass that, too. What annoys me is that we don't issue or associate anything with Medicaid or Medicare, so why should I have to learn about it? Its just boring to me and I don't agree with the Medicaid system at all, whatsoever. I was raised to work for what you have and if you don't have the money for it, you don't get it. I've been without health insurance of ANY kind for over four years, but you don't see me cheating the system. With that said, I don't have a problem helping people in need and I actually do have a big heart and love to bless others, but when you're just lazy, I have a big problem with that. Its not right and its just one of the many reasons why this country has been run into the ground.

On another note, don't you hate it when you just aren't motivated to cook? I do. And it gets old. Sometimes I think living on my own is overrated. Its really hard to cook for just one person and its still somewhat costly. But I also don't like getting fast food that often, either. Plus, that adds up, too. Even just getting a drink to take to a work meeting adds up. I hate how everything costs so much money.

By the way, I had my first day out in the field yesterday. My co-worker is awesome! I foresee us becoming friends. He and his fiance are to wed in October and I may get to do her bridal makeup, which is right up my alley. Anyway, yesterday I got to see how things go and what I'll be doing exactly. I'm excited to get out there and start making money. It feels really good to be working again, I just don't have the motivation to study today, but I must. I also have to go in today for a conference call via Skype with our Vancouver office at 2 p.m. to 6 p.m. I think I'll tease my hair today and wear red lipstick. Simply because I can and I haven't done that in forever.

I really want to post recipes here, but my camera phone sucks. And I don't know where my real camera is. I think I do, I'll have to check. But tonight I am either going to make steak salad or steak with twice baked potatoes and roasted olives and artichoke hearts. We shall see. I probably shouldn't spend too much time cooking because, again, I have to study tonight. Why did I book that test for 8 a.m. tomorrow? Stupid me.

And you know what? I think the Kardashians are all pretty, in their own way. If I look half as good as Kris Jenner when I'm older, I'll be happy. I really just want their skin texture, its perfect. I wouldn't mind having Kim's body, though, either. Haha. We can all dream, right? I wouldn't mind having one of their houses, either.

Well, I need to get ready here. I have some dishes to do. I'm going to blog again tonight, though. I really need to get some other things in my head onto black and white. So until then....

Picture It...

Sorry, when I couldn't think of a title, I thought about Sophia on The Golden Girls, every time she's about to tell one of her infamous Sicily stories, haha!

Not much has been going on. I'm taking my Life Insurance exam in the morning so I can start officially going out in the field with my boss. Its been an adventure, but I'm excited to get it done. I've come down sick, which I'm not happy about.

I have a lot of things that I want to do and blog about in the upcoming weeks/months, whatever may occur first. I've found a ton of pumpkin recipes for baking and such on pinterest, so there WILL be blogs about those. Also, I'm going to try making my own laundry detergent. All thanks to pinterest. Its so addicting.

I've tried dating via the internet. Definitely doesn't work. I don't know, it seems like a lot of people just have things handed to them, like good jobs, relationships, etc. But, I guess life isn't fair. It sucks and then you die, apparently.

By the way, I love fall scents so much, I'm going to do a whole blog post on it. Right now I'm burning a little candle from Glade. Its pumpkin smelling. So yummy. Anyway, I need to go rest and study for my exam in the morning. Toodaloo!

Cooking Tip #1

Let me briefly explain, before I go into this. I love to cook and my blog is going to be used for a variety of topics. One of the things I'm going to post is "Cooking Tips". Today is the first one.

To get the most juice out of a lemon or lime before you squeeze it, submerge it in hot water for fifteen minutes, and then roll it on a counter top. Voila, almost twice the amount of juice!

Staples In The Pantry

So, I've basically gotten to the point where I only eat one meal a day. I know, not good for you, but whatever. I'm just not hungry that often. Plus, its really hard to cook for just one. Not to mention the clean up process. I don't know anyone besides a Stepford Wife that enjoys doing the dishes.

Anyway, when I do cook, like tonight, I like to see what I have in the pantry and throw something together. I wanted to talk about staple items that I keep in my pantry. You may or may not keep the same things around, but if you don't, maybe you can pick up a thing or two from my list:

Long Grain White Rice
Cream Of Mushroom/Celery/Chicken Soup
Light & Dark Red Kidney Beans
Black Beans
Stove Top Stuffing
Campbell's Chicken Noodle Soup
Breadcrumbs
Canned Milk
Instant Gravy Mixes
Hamburger Helper
Canned Green Beans/Carrots/Mixed Vegetable Medley
Canned Peaches/Pears/Fruit Medley
Peanut Butter

Those are just some of the things I tend to keep around, in case I'm in a pinch. I also keep some refrigerated items around like:

Onions
Bagged Salad
Milk
Eggs
Butter
Grapes
Cheese
Sprite/Gingerale (for being nauseated during flu season)
Hummus
Carrots

You'll always find that stuff in my fridge. Anyway, I hope this was helpful to some of you. Not like I get many readers, but hey! Haha.

Healthy Snack Ideas

So, I'm a bigger girl, but I don't really eat "junk" food. Thought I'd throw some snacking ideas out there for you. These are some of my favorites.

1. Pimento Stuffed Olives (I get a huge jar of them at Big Lots for around $2!)
2. Plain Almonds (I get the really big bag at Wal-Mart for about $10, but they last me forever.)
3. Fat-Free Cheese Sticks
4. Frozen Greek Yogurt (I personally like the Yoplait and Chobani brand, but whatever brand you like, is fine. Put it in the freezer for a couple of hours and you have frozen yogurt, which is way healthier than ice cream.)
5. Pickles (Especially in the summertime, when its hot.)
6. Fruit (I can't stress this enough. Its good for you and I'd rather have a good piece of fruit over a candy bar any day.)
7. Frozen Grapes (Again, fruit.)
8. Raw Snap Peas
9. Hummus (My favorite is the roasted pine nut kind and you can dip veggies or light crackers in it. sometimes I replace mayonnaise on a sandwich with hummus, instead.)
10. Whole Wheat Toast with Peanut Butter (Or pretzels with peanut butter.)

Love Letters

So I've been watching Ghost Hunters today, and there was an episode about the Edgewood Plantation, which is located in Virginia. There was said to be a woman that lingers there named Lizzie (Elizabeth) Rowland, and she awaits for her lover to return from the Civil War. He never came home to her and she died of a broken heart. During those times, if a man gave you a diamond ring, you were supposed to carve your initials into a window or glass. She put her whole name in old script. It is still there to this day.

Moving on, I decided to look up love stories during the Civil War and came across some information about Dr. Bowman Bigelow Breed and his wife, Hannah Breed. The doctor and his wife promised to write each other everyday, even if "only a line". From what I understood, when all was said and done, there would end up being about 1000 letters exchanged between the two. Here is a picture of their sacred love letters:

Rain...

So its raining in eastern Tennessee right now... Pretty much storming. I love it. The rain is so relaxing, I'm very much so enjoying it. The lights are off in my apartment and I have the blinds open to let in just enough light. I may light a candle or something to relax a little more. I love candles, too! I'm listening to a song called "Please Don't Leave Quite Yet" by Adam Agin. Very good song, maybe I'll post it on here for you to give a listen. Sorry this post may seem a little scatter brained, but not many people read my blog anyway :)

On a side note I am trying to quit smoking. Bad habit, I know, whatever. I've only smoked for a little over a year and if I can ween myself off of them, I think I'll survive. Tonight I think I may cook some bacon wrapped chicken, we'll see. I've not been in the mood to cook lately. Just going through a funk, you know how it is. Wow, its really coming down outside and for now I'll stop because I'm going to enjoy this peaceful storm :)

RIP My Little Love...

So in my previous post, I mentioned my baby sweet Itzy Bitzy passed away about ten days after our arrival in Tennessee. Due to unfortunate humane reasons, I had to put her down. Itzy Bitzy was that special dog... I trained her and she trained me. Sometimes I could just look at her and she'd know what I was saying without words. I think about her and miss her everyday. My heart completely broke into a million little pieces on May 2, 2012 at 4:30 p.m. Words can't describe how awful that was for me and my eyes are tearing up just thinking about it and remembering...

Funny how animals become like children to you. You don't truly realize how attached you grow to them until they're gone. I really don't want to get too into my feelings about this because I'll just get really upset all over again and I'd rather not... It still hits me sometimes and I'll probably blog about it later when that happens. I love and miss her so much. She was my little world <3

Back for good...

So I just got my internet hooked up today. A lot has happened since I've actually taken the time to type out a blog. Ten days after I arrived in Tennessee, my sweet Itzy Bitzy had to be put down and my heart broke into a million little pieces and still is. I have a new dog, but its not the same and I will make a separate entry for that. I am going back to cosmetology school here to be licensed in Tennessee. I did also pass my state boards in New York so I am a fully fledged licensed cosmetologist there. Now I have a raging headache so I'll post later tonight. Toodles!

Monday, July 9, 2012

Hello, world.

So I just realized I've been supermegatron slacking with the posting and I'm sorry about that. However, regular posts will be up come Thursday since my internet is finally getting hooked up. Lots to post about but for now all is well in Tennessee. Stay tuned! :)

Checking in...

I've been without a computer for about 3 weeks or so now. My keyboard no longer works so I'm screwed, which is why I haven't been blogging regularly. But I am finally moved down to Tennessee and enjoying it so far. Hopefully I will have a functioning computer and internet connection soon. Anyway, take care until next time.

PASSED!

I forgot to inform you... I passed my written portion of my state board cosmetology testing! I took that test with one hour of sleep and super stressed out about 50 different things! YAY!

Marilyn Monroe

Okay, who doesn't love Marilyn Monroe?! I think she was absolutely beautiful! Not only was she beautiful, she was also intelligent and insightful. I am more than certain you all have read at least one of her quotes. I am going to include some in the post, as well as some facts about her. Also, this picture of her is one of my most favorite pictures! I want to get it framed for my new apartment.
FACTS:
1. Marilyn Monroe was brought up by foster parents Albert and Ida Bolender until the age of seven. Marilyn Monroe wrote in her biography that she believed that Albert, her foster father was actually a woman. In total she had 12 sets of foster parents.

2. When she was 16, Marilyn Monroe married 21 year old James Dougherty in order to avoid being sent to an orphanage or to yet another foster home. She divorced him when she was 20.

3. Marilyn did her famous nude photoshoot in 1947 nearly SIX YEARS BEFORE the photos were used for Playboy's 1953 first edition. the rights to the photos were purchased for $500 by Hugh Hefner and Marilyn Monroe became the first 'Sweetheart of the Month'. Later the name was changed to Playmate of the Month. In 2007, Playboy published 20,000 EXACT replicas of this first edition. Some copies of this republication are still available for purchase for approximately $50.

4. Marilyn's great love was probably baseball giant Joe Dimaggio. When they were married, Joe was intensely jealous of the attention showered on Marilyn Monroe by men everywhere. When the "The Seven Year Itch", was filmed in New York, now famous promotional photos were taken on a subway ventilator outside the Trans-Lux Theater on 52nd Street and Lexington Avenue. Joe watched Marilyn's skirt fly up again and again, revealing her white panties before thousands of enthusiastic photographers and fans. Jealous Joe angrily stormed off. Later the couple had a huge fight in the hotel. Two weeks later they separated and eventually divorced.

5. After their divorce, Joe Dimaggio rescued Marilyn Monroe from forced institutionalization at the Payne Whitney Psychiatric Clinic (67th Street and York Avenue, NY City). For 20 years after her death he had a dozen red roses delivered to her crypt three times a week. He never remarried. It is claimed that Joe's last words were: "I'll finally get to see Marilyn". (Ugh, I just think that is soooo sweet!)

6. Hugh Hefner owns the burial vault next to Marilyn Monroe at Westwood Memorial Park, Los Angeles, California and intends to be buried there.

Oy

That's about all I have to say. I am getting sick at the most inopportune time. Hello, sinus infection, you are not welcome. Not much else going on. Got some cute decor from Big Lots today. I'll post pics later. Have a good evening.

Sunday, April 8, 2012

Well...

If you've noticed I've not been posting too often, like I was. I may tonight. Going to cook something and maybe do a review. We shall see how ambitious I'm feeling. But I have a bottle of already mixed up margarita drink that I'm going to pop open for myself and maybe read a good book on my patio. I may do some packing, who knows.

You're thinking, "Shouldn't she be doing Easter Sunday stuff with the family?".

No. No, I shouldn't because here's a little tidbit, I'm an Orthodox Jew! We don't celebrate Easter like the Christian faith does because man has twisted the word so much, this is not actually the day Christ rose from the dead. Also, Sunday is not the actual Sabbath. Its actually Saturday and you can look that up for yourself. If you look up Easter, it is actually a pagan holiday of fertility. Go ahead, jump on over to Google and see for yourself!

Anyway, this week, I'll be busy getting boxes and packing more. Yesterday I gutted out my bathroom so it'll be easier to clean up really quick the last day I'm here. I just want to get this over and done with. Tomorrow I possible foresee a trip to Big Lots to get jelly beans on sale, hahahaha! And some of this other decor that's on sale now.

But for now... Going to clean up my kitchen a little bit, get some chicken defrosting, pour a drink, and relax!

I Have Returned

Well hello there! My bestie in Florida has been bugging me to blog so here it is. I am back from Tennessee! Now I'm starting to pack and try to cook up all the meat I have in my freezer. I've been approved to live in this gorgeous apartment complex near the university and I am beyond elated to move in! I love moving into a brand new, fresh apartment. I love to decorate. I plan on getting a new bedding set and curtains for my bedroom. The spare room will be in hues of purple because I'm putting my living room curtains in there and I have a pretty purple duvet cover. My living room will probably be black, burgundy, and gold. Bathroom, not sure yet. We shall see. My dining room will still be my classy old school Italian wine vineyard. Kitchen... hmm... maybe cafe/bistro/coffee shop? I have options and am open to suggestions! I'll post more tonight but I really wanted to get this posted now. Toodles!

Roadtrip

Well, tomorrow is the big day! I'll be heading south for 800 miles. It will be worth it, though. I get to see my Daddy :) And this trip will mainly entail apartment hunting. I'm excited to find a place. I just hope I get the right apartment and it all works out for me. I'll be taking pictures and updating while I'm down there, so stay tuned!

Busybee

So this is somewhat a to do list for myself, while talking about my little adventure I'm about to make. Unfortunately, New York is just not for me and its time to pack my life up and move again. This time I'll be back down south of the Mason-Dixon Line. I'll be living in the bible belt, Tennessee. I'm actually looking forward to moving and it has a lot of perks. My father will be about 45 minutes from me and I will be 12 hours from my grandmother and 12 hours from my brother. I am still going to finish up my licensing procedures for New York State so that I can switch my cosmetology license over to Tennessee. So I'll come back to New York for that and to visit my friends I made here.

So today is Monday, and I have a ton to do before Thursday. I am going to sleep all day Thursday and then head down to Tennessee around 8 or 9 pm Thursday night. I will arrive mid-day Friday. Then I will meet up with my awesome Dad, and go apartment hunting.  I have a pretty good feeling about where I will end up, and I'm excited. There's just something about moving into a brand new apartment. I love to decorate and be a home maker.

So in between now and tomorrow, I have to clean my car, finish packing, clean my dog's carrier crate, and load up my car with stuff I don't really need right now, just so I have less to load up when I make the official move. My Dad is going to hang on to the stuff in between now and making the official move. Side note, I need to pack up my tiny Christmas tree. I also need to get stuff to patch holes, and I have to find shipping tape. Oh, I also need an EZ-Pass.

I'm also going to treat myself to new bedding for when I get there. I may redo the bathroom, as well. But I also have to get a small apartment sized washer and dryer. What I love about down south is that almost every complex has washer and dryer hookups in their units. Anyway, I will post this now but most likely will be adding to it later this evening.

What's On My Heart Tonight

So my dear close friend back home lost her grandpa tonight. My heart deeply aches for her and I know she's going to read this. Wanda, just know I am here for you and I love you and will do anything I can in my power to help you through this. You WILL get through it. You're strong and stubborn just like me and I know you will be okay with time. <3 If anyone happens to stumble upon my blog... please say a little prayer for my friend <3

Rascal Flatts - Easy ft. Natasha Bedingfield

Can I just tell you how much I love this song? Because I lovelovelove it! I always play it when I'm driving and I love to sing along with it. The bridge of the song is absolutely amazing! First of all, I can definitely relate to it. And of course they sound amazing together! Give it a listen.

Review: Velveeta Cheesey Skillets (Chicken Alfredo)

So tonight I didn't feel like putting anything fancy together and I decided this would be perfect for a review. I was at Walmart a few weeks ago and bought this Velveeta Cheesey Skillet to try because it was literally under $2 for the box. Total cooking time, including prep time was about 30 minutes. The directions are step by step on the back of the box. This is perfect if you're running low on time and it is very budget friendly. The only thing you have to buy separate is the chicken. I used two large boneless skinless chicken breasts and its just the right amount.

However, I am the type of cook where I will put my own twist on things and add things where I see fit. So I finely chopped a small onion, used a tablespoon of chopped fresh garlic, and I seasoned the chicken with salt and pepper. Brown the chicken up until its about 3/4 of the way done before you add the onions and garlic, if you choose to do so. For presentation purposes, I also took the liberty to add dried parsley flakes over the dish.

Water For Elephants

So I really used to love reading. I'm getting back into it, slowly but surely. Right now I'm reading 'Water For Elephants'. I picked it up the other day at Target. The fact that it was 20% off just gave me even more of a reason to buy it. I really wanted to see the movie but never got around to it, so I'm going to read the book instead. I might see the movie later but I just feel like there is so much more detail in the book.

Crossroads...

Let me just explain a little bit about my life here....
1. I never have good luck
2. I never have good luck

So tonight I went out to celebrate a friend's 21st birthday. It was fun and I met some nice people. I also met her friend who happens to be a manager for Supercuts in one of the suburbs around here...

Mind you, I have been looking for work for two months now and every time I would get closer, I just got let down. This last place hit me pretty hard, actually, and that's when I decided it would be best for me to move closer to my father. I have finally come to peace with moving and am actually looking forward to it.

But on the other hand, should I stay and put a year behind the chair and finish getting my license? I just don't know. My heart is so set on moving now. I don't know what to do. On the other hand, I wanted to be able to get myself a job without any help because I have too much pride.

I just thought for sure I'd be able to get a job all on my own and I tried so hard. I'm miserable sitting in my apartment every day with nothing to do. I'm going to Tennessee next weekend to find a place to live. My heart is just so set on moving...

But again, should I stay here and work and get experience? I just don't know what to do. My father has been my rock and my safe place... He has his heart set on me moving close to him, too. I don't want to let him down even though this is MY life.

I applied to TEN salons and nobody wanted me... I just feel deep down in my heart I should move closer to him. I guess I just had to get this out in black and white because the subject came up again tonight. It kind of ruined my night, to be honest. I'm glad I have finally, MAYBE, found a place that wants me but... I just don't think I can do it here anymore.

Creamy Chicken N' Biscuits

Being from the south, I love comfort food. It soothes the soul and warms the heart. One of my favorite meats is chicken because its so versatile and the possibilities are endless! This recipe is not fat free or diet friendly, so I wouldn't cook this very often but since I've been sick and haven't cooked a good meal in a while, I'm making this tonight.

Ingredients:
2 cups of chicken, cut into one inch pieces
1 medium chopped onion
3 cups of mixed vegetables (you can find these canned or frozen, and you may or may not need all 3 cups)
2 tablespoons olive oil
1 can cream of mushroom soup (you can use any, i.e. chicken, cheese, celery)
1 cup sour cream
1 cup cheddar cheese
1 package of Bisquick Complete Cheese Garlic Biscuits (you can find this in the baking isle of your grocery store, and it costs about $2)

Directions: Preheat Oven to 400 degrees. Sautee chicken and add the onion when the chicken is about half way cooked. Cook until chicken is done. Add vegetables, cream of mushroom soup, sour cream, and cheese. Heat through. Place in baking dish and spread evenly. Bake in the oven for about 20 minutes. After 20 minutes, remove dish and heat oven to 450 degrees. Mix together the biscuit mixture and put spoonfuls of biscuit mixture over the chicken dish. Bake at 450 for another 8 to 11 minutes, until biscuits are done. Enjoy!

Some side notes: You can use fresh vegetables, I just used what I had on hand. You can also make the biscuits from scratch. Again, this was easier for me and its what I had. If you make your own, make enough for 6 biscuits. You also need to season the meat to your liking. I used salt, pepper, fresh garlic, and one medium onion. The amount of vegetables I used was just under three cups, so that's fine also. Again, you may or may not need all three cups.

Heartfelt Quote That Hits Close To Home

"Love changed my perspective of life. Everywhere I go, I take a piece of you with me, I don't think that will ever change and honestly, I don't think I'd want it to change. I'm happy I've been in love. Being in love changed my life, for the better."

So who has Pinterest? ME! I love it. I know its a fad right now, but whatever. I also have a Fancy account. If you're curious about that, just go to your browser and type thefancy.com. I wish my links would work here, but that will just have to wait until later to fix. Its similar to Pinterest and I enjoy both. Here are some pictures I really love from both sites.
